How do consumers perceive a wine? Which sensory characteristics influence their preferences? At the Innovative Enology Master, students have the opportunity to answer these questions by completing an experimental Master’s Thesis based on real industry challenges.

One recent project focused on sensory analysis and consumer acceptance of different Rioja Alavesa Designation of Origin wines, combining scientific methodology, sensory evaluation and consumer research to generate results with practical value for the wine sector.

This type of research reflects the programme’s educational philosophy: combining science, innovation and real-world application. Students work alongside wineries, companies, researchers and industry professionals while developing advanced skills in sensory analysis, wine quality, product innovation and applied research.

The Innovative Enology Master is jointly delivered by the Public University of Navarre (UPNA), the University of the Basque Country (EHU) and the Université de Bordeaux, three internationally recognised universities. Students also have the opportunity to earn a double international degree, providing a significant advantage for careers in research and the global wine industry.
